Moroccan Cigars – Meat filled crispy wrappers

A group of Youtubers got together and decided to put together a stellar roundup of dad friendly recipes for Father’s Day. Last year we put on a spectacular competition for Father’s day and pitted Father against Father in a friendly cooking competition. Each Father teamed up with their kid and made something edible for the judges using pre selected ingredients. You can watch that video here.

This year I decided to make something I know my father and my children’s father would love – a spiced ground meat filling inside a crispy wrapper, The Moroccan cigar. This is fairly simple to make and looks extra authentic when I use a icing bag and tip to pipe the filling to give it a cylindrical shape. These are best fried but you could brush it with oil and bake it.

Moroccan Cigars – Meat filled crispy wrappers

Ingredients

  • Ingredients
  • 2 lbs ground meat
  • Salt & pepper to taste
  • 1 tsp cumin powder
  • 1 tsp paprika powder
  • 1 tsp cayenne pepper
  • 1 tbsp pomegranate molasses
  • 1/4 cup chopped Parsley
  • 3 tbsps chopped mint
  • 3 – 4 Spring onions
  • 3 cloves garlic crushed
  • 1 egg
  • 20 – 25, 8 x 8 Spring Roll wrappers
  • 1 extra beaten egg

Instructions

  1. Process
  2. Mix all the ingredients together and add to a processor and process till a smoother paste
  3. Add to a piping bag
  4. Separate the Spring roll sheets and brush with egg wash
  5. Pipe the filling in a straight line roll over the wrapper and fold them inwards and roll like a cigar
  6. Add more egg at the end and seal
  7. Fry in hot oil

Mushroom 65

Mushrooms are battered with beaten egg and cornstarch, sautéed and cooked in a delicious 65 masala that is typically made with the popular Chicken 65. Suggestions to make a vegetarian/vegan version is included.

Chicken 65 is a very popular dish in India. With it’s strange name, it’s origins are debatable. Some people think that it was named for it’s 65 ingredients, other think the chicken had to be 65 days old. The story I choose to believe is the old British Canteen that simply had a typesetting boo boo and the name just stuck.

Mushroom 65

Ingredients

  • 1 red onion finely chopped
  • 2 tbsps chopped garlic
  • 2 tbsps chopped green chillies
  • 1 cup(approx) fresh curry leaves
  • 2 tbsps ginger and garlic paste
  • 2 tbsps red chilli paste or Sambal Oelek
  • 1 tsp cumin powder
  • 1 tsp red chilli powder
  • salt
  • red food coloring with a little water
  • oil
  • 7-8 Mushrooms
  • 1 beaten egg
  • cornstarch

Instructions

  1. Dip the Mushrooms in the egg mixture and add cornstarch. Mix well and keep aside
  2. Heat some oil and saute the onion, followed by the garlic and chillies and cook till the onion is soft
  3. Add curry leaves
  4. Add the ginger and garlic paste and cook for a few minutes, till the rawness is gone
  5. Add the chilli paste and powdered spices and mix well
  6. Add some salt and the food coloring
  7. Add more water if too dry
  8. Add the mushrooms, coat well in the masala and serve

Basic Hummus

I love hummus especially since I grew up in the Middle East. It’s so easy to make, so nutritious either as a snack or even as a spread. Can be made in minutes! If I’m throwing a party, 9 out of 10 times, I will likely have a large platter on my menu.
This is so versatile, once you’ve mastered the basic recipe(which will take all of 5 minutes), you can move on to some interesting variations – extra Garlic, Red Pepper, Herb or Olive.
 
Basic Hummus

Ingredients

  • Ingredients
  • 19 oz can Chickpeas or Garbanzo beans (reserve a few)
  • Juice of a Lemon
  • 2 tbsps Olive oil
  • 4 cloves Spiced Garlic
  • 3 tbsps Tahina (sesame paste)
  • Salt and white pepper
  • Water as required

Instructions

  1. Place all the ingredients in a food processor and start to blend together
  2. As water as required and blend till the hummus is smooth
  3. Serve on a platter, covered with Olive oil, a pinch of paprika, cumin, oregano and sumac.
  4. Garnish with reserved chickpeas and eat with pita bread.
