Saddle up cowboy, you’re in for a wild recipe! If you’ve following me for a while, you will know that I loveee a good theme party and my bff Shreeti is a woman after my own heart. She’s almost as nuts as I am and will go to any lengths to throw a great soiree. So when she mentioned she was throwing her husband a ‘Cowboy’ themed party, I don’t believe there was one person more excited than me. I asked if I could bring something themed to the party and she was thrilled. After thinking long and hard about what I could make, I decided on making a Buffalo Chicken Dip.

Now there are many many recipes out there, but this one is on Cowboy crack, I promise you. For beginners, the Chicken is marinated in Buffalo & hot sauce and studded with Garlic and Jalapeno and char grilled before it gets folded into the other ingredients like cream cheese, sour cream, ranch dressing, spring onions, jalapeno, buffalo and hot sauce and cheese!

As a centerpiece, I decided to use a small Jalapeno and stick rice grains in it to look like a cactus, it turned out so well I was thrilled. Check it out in the video link!

Buffalo Chicken Dip

Ingredients
  

  • Chicken & Marinade
  • 1 lb boneless Chicken thigh
  • 1/2 cup Buffalo Chicken sauce
  • 1/4 cup Franks Red Hot sauce or any other hot sauce but adjust the amount based on the spice level
  • 2 tbsps crushed Garlic
  • 2 tbsps minced fresh Jalapeño
  • Salt and Pepper to taste
  • Dip
  • 250 gms Cream Cheese
  • 1 cup Sour Cream
  • 1/2 cup Ranch dressing
  • 1/2 cup Buffalo sauce
  • 1 – 2 tbsp of Franks Red Hot sauce or any other hot sauce but adjust the amount based on the spice level
  • Salt & Pepper to taste
  • Add 2 tbsps sliced Spring Onions
  • 1 tbsp minced Jalapeno
  • 1/2 cup of cooked Bacon bits
  • ½ cup of shredded Cheese
  • ½ or more of the cooked Chicken
  • Topping
  • Remaining cooked Chicken
  • 1/4 cup sliced Spring Onion
  • 1/4 cup cooked Bacon bits
  • 1 tsp minced Jalapeno
  • 4 slices Jalapeno
  • 1 tsp Buffalo Chicken sauce
  • Splash of hot sauce
  • Pepper
  • ¼ cup shredded Cheese

Instructions
 

  • Marinate the Chicken with all the ingredients listed under Chicken & Marinade and allow it to marinate from a few hours to overnight
  • Cook this on a hot BBQ and when cool cut the chicken into a small dice
  • Also add the slices of Jalapeno so they char as well and keep aside
  • Warm up the cream cheese in the mocrowave so it’s spreadable and add the sour cream, ranch dressing, buffalo sauce, hot sauce, slat & pepper, spring onions, jalapeno, bacon bits, shredded cheese and a little more than half of the diced chicken and mix it together well
  • Spread this into an oven safe dish and top with all the ingredients listed under Topping and bake in a preheated oven at 350 degrees centigrade for 15 – 20 mins
  • Serve with crackers, crisps or tortilla chips
