Don’t throw away those overripe bananas – this simple one bowl recipe makes great moist and delicious Chocolate Banana Muffins.

Let me come clean – I don’t like Bananas at all, but the rest of my family does and very often I’m left with Bananas that get overripe and then nobody wants to touch them. Most of the time with my busy schedule these just gets chucked in the garbage but since we’ve all been forced into isolation and supplies are low so I decided to put these to good use. I came across this amazing looking banana bread online from I Wash You Dry and was determined to try it it for myself. I love that this recipe is simple and one bowl and I’ve now made it many times and made it my own.

You can make it in a loaf, but I prefer to split it and get 8 moist muffins that my family can grab and go.

I’ve used Chocolate chips as that goes great with Banana, but you could add nuts or seeds instead to make it healthier. The kids do love those Chocolate chips though 🙂

Chocolate Chip Banana Muffins

Ingredients
  

  • 3 overripe Bananas – 21/4 cups
  • 1/2 cup granulated Sugar
  • 1 beaten egg
  • 1/3 cup melted Butter
  • 1 tsp vanilla essence
  • 1 tsp baking soda
  • 1 1/2 cups pre sifted all purpose Flour
  • Pinch of salt
  • 1/2 cup dark or semi sweet Chocolate chips

Instructions
 

  • Mash the bananas with the sugar
  • Add the egg, butter, vanilla, baking soda and flour in gradually
  • Add a pinch of salt and the chocolate chips
  • Scoop into 8 large muffin cases and bake in a preheated oven at 350 degrees for 22 mins
