The Inspiration Behind the Recipe

Dubai has a way of making everything feel special. Gold-dust sunsets, sparkling skylines, extravagant flavours—there’s nothing quite like it. During one of my trips, I fell in love with the local desserts that combined rich nuts, crisp pastry, and creamy textures. So this year, I wanted to bring some of that magic into my Christmas kitchen!

These chocolate bars take the humble idea of a stuffed chocolate slab and elevate it with Middle Eastern flair. The kataifi adds crunch, the pistachio cream adds decadence, and the cranberries add a festive pop. And of course… a touch of gold leaf to finish because—hello—it is Dubai Christmas chocolate, after all.

What Makes This Chocolate Bar Special?

✨ Kataifi for Crunch

Kataifi pastry is usually used in Middle Eastern sweets like kunafa, but here it becomes an irresistible crispy layer inside the chocolate bar. Toasting it in butter adds a nutty, toffee-like flavour.

✨ Tahini + Pistachio Cream Filling

Tahini gives the pistachio cream a subtle earthiness and cuts the sweetness beautifully. The filling becomes creamy, nutty, and rich—like a pistachio halva meets fine chocolate.

✨ Festive Add-Ins

Whole pistachios and dried cranberries create bursts of texture and colour. Every slice looks like edible confetti.

✨ Luxury Presentation

The red and green swirls look like modern holiday art, and the optional gold leaf makes these bars look like they came from a boutique chocolatier.

Ingredients
  

Kataifi Layer
  • * 250 g Kataifi pastry defrosted overnight
  • * 100 g Butter
Pistachio Filling
  • * 1 cup Pistachio cream
  • * ¼ cup Tahini
  • * 250 g sautéed Kataifi plus extra if needed
Chocolate Shell
  • * 200 g Dark chocolate for 2 bars
  • * White candy melts plain or pre-coloured
  • * Red & Green food colouring optional
  • * 12 Pistachios per bar
  • * 12 dried Cranberry pieces per bar
  • * Edible gold leaf optional

Method
 

  1. Prepare the Kataifi
  2. Defrost the kataifi pastry overnight and gently loosen the threads. Melt the butter and sauté the kataifi until lightly golden and crisp. Allow it to cool completely before using.
  3. You can also toast extra kataifi and store it in a stainless-steel container for up to a month.
  4. Make the Filling
  5. Warm the pistachio cream in the microwave for about 30 seconds to soften it. Mix in the tahini until smooth, then fold in the sautéed kataifi. If the mixture feels too wet, simply add a bit more kataifi until it’s light and fluffy.
  6. Prepare the Chocolate Moulds
  7. Melt the white candy melts and tint them red and green, or use pre-coloured melts if you prefer. Splash or swirl the colours into your silicone moulds and place them in the fridge to set.
  8. Build the Chocolate Shell
  9. Melt the dark chocolate and spread a thin layer along the bottom and sides of your moulds. Add whole pistachios and dried cranberries so they set into the chocolate. Chill until the shell hardens.
  10. Add the Filling
  11. Spoon the kataifi mixture into the moulds and level it gently. Chill again to make topping easier.
  12. Seal & Finish
  13. Pour more melted chocolate over the filling and smooth the top. Refrigerate for several hours until fully firm. Unmould the bars carefully and decorate with edible gold leaf for a luxurious final touch.
