I wasn’t intending to make these cute little Roulades or Beef Olives, but Costco started selling Boneless Short Rib and I just couldn’t resist! I spiced them up and rolled them up with Potato and Carrots.
This was then seared and cooked in a delicious spicy curry!

Goan beef roulades—often called “Beef Olives” or Goan Beef Rolls—are thin slices of beef rolled around a spiced filling, braised in a rich, tangy gravy. This dish blends Portuguese technique with Goan masalas and is often made for festive occasions or Sunday meals.

Goan Beef Roulade

Ingredients
  

Spice Paste
  • 5 tbsps Ginger & Garlic paste
  • 1 tbsp Salt
  • 1 tbsp Pepper
  • 1 tbsp Cumin
  • 1 tbsp Red Chilli powder
  • 1 tbsp Turmeric
Beef & Gravy
  • 500 gms thinly sliced Beef Short Rib, top round/top side/inside round or flank steak
  • 1.5 cups finely minced Onion
  • 2 tbsps sliced Green Chillies
  • Chopped Coriander
  • Thick sticks of Potato & Carrot cut to size
  • 2 cups fresh pureed Tomatoes
  • 1 cup of Water
  • Salt to taste
  • 1 tbsp Vinegar

Method
 

  1. Prepare the Spice paste and keep aside
  2. Lay out the thinly sliced Beef and brush with the Spice paste
  3. Add some minced Onion, sliced green Chillies, sticks of Potato & Carrot, some chopped Coriander & roll it up
  4. Secure with a tooth pick
  5. Heat some Oil in a saute pan and just sear the Beef and keep aside
  6. Wipe down the pan and add some more Oil
  7. Add the rest of the Onion and saute, add the remaining green Chilli
  8. Add the remaining Spice paste and mix
  9. Add the Tomato puree and Water
  10. Add Salt to taste
  11. Bring to the boil and add the Vinegar
  12. Put the Roulades back into the pan, cover and cook for 35 mins, flipping in between
  13. Once cooked and cooled down, just remove the toothpick and serve with the gravy
