Ingredients
  

For Roasting & Masala Paste
  • ½ cup grated Coconut
  • ¼ cup Coconut slices optional, for garnish
  • 2 tbsp Coriander seeds
  • ½ tsp Black peppercorns
  • ½ tsp Fennel seeds
  • ½ tsp Fenugreek Methi seeds
  • ½ tsp Cumin seeds
  • 10 Cloves
  • 2- inch stick Cinnamon
  • 10 dried Red Chillies stems removed, deseed if less heat preferred
  • 3 tbsp Oil
  • 1 cup sliced Onion
  • 6 Garlic cloves
  • ½ tsp Turmeric powder
  • ½ cup Tamarind water soak tamarind in ½ cup warm water
  • ½ cup Water for grinding
For the Curry
  • 4 tbsp Oil
  • 1 cup sliced Onion
  • ½ cup Curry leaves
  • 1 kg Chicken pieces with bone for more flavor
  • 1 tbsp Salt adjust to taste
  • Reserved roasted Coconut from above
  • Fresh Coriander for garnish

Method
 

  1. Roast the Coconut:
  2. In a hot pot, dry roast ½ cup grated coconut, stirring constantly until evenly browned. Set aside.
  3. (Optional) Brown ¼ cup coconut slices and reserve for garnish.
  4. Prepare the Masala:
  5. In the same pot, dry roast coriander seeds, peppercorns, fennel seeds, methi seeds, cumin seeds, cloves, and cinnamon until fragrant.
  6. Add dried red chillies and roast briefly.
  7. Add 3 tbsp oil, onions, and garlic. Sauté until the onions soften. Stir in turmeric powder.
  8. Allow mixture to cool, then transfer to a food processor with ¾ of the roasted coconut (reserve the rest for later).
  9. Add tamarind water and ½ cup plain water. Grind into a smooth paste.
  10. Cook the Curry:
  11. Heat 4 tbsp oil in the same pan. Add onions and curry leaves, sauté till golden.
  12. Add chicken pieces and 1 tbsp salt. Sauté until lightly browned.
  13. Add the ground masala paste and coat the chicken well.
  14. Rinse the blender jar with ½ cup water and add to the pot.
  15. Cover and cook for 30 minutes, stirring occasionally.
  16. Finish the Dish:
  17. Remove the lid and cook uncovered for 15 minutes, allowing the gravy to dry and cling to the chicken.
  18. Stir in the reserved roasted coconut, adjust salt, and add a little more oil if needed.
  19. Garnish with fresh coriander and the reserved coconut slices.
  20. Serve:
  21. Enjoy hot with roti, neer dosa, or steamed rice.
