Rasta Pasta is a vibrant Caribbean-inspired pasta dish that combines creamy, cheesy sauce with jerk-seasoned proteins and colorful bell peppers. Despite the name, it’s not traditionally Rasta (as Rastafarians often follow an Ital diet), but it’s beloved in Jamaican fusion cuisine for its bold flavors.

Ingredients
  

  • 454 gms Penne cooked till al dente
  • 1 cup reserved Pasta cooking liquid
  • 4 tbsps Butter
  • 1/2 cup sliced white Onions
  • 1 tbsp crushed Garlic
  • 2 cups sliced Mushrooms
  • 2 cups sliced Yellow Red & Green Peppers
  • And allow these to cook
  • 4 tbsps Jerk paste
  • 2 cups heavy Cream
  • 1 tsp crushed Pepper
  • 2 cups Parmesan
  • 4 tbsps Thyme
  • 1/4 cup Spring Onion leaves
  • Jerk Chicken – optional

Method
 

  1. Cook the Penne according to the the package instructions & reserve one cup of the cooking liquid
  2. Melt the Butter and saute the sliced Onions
  3. Add the Garlic and then then Mushrooms
  4. Add the sliced Peppers
  5. Add half the Jerk paste, followed by the half the heavy cream and mix
  6. Add the cooked Penne
  7. Add the pepper, the cooking liquid
  8. Add half the Parsmesan
  9. Add the rest of the heavy cream, more jerk paste, the Thyme and the rest of the Parmesan
  10. Add the Spring Onion leaves
  11. Add the Jerk Chicken
