Soak the bean noodles in hot water for 10 mins and drain
Snip the noodles with a scissor
Soak the palm sugar in hot water and allow to cool
Prepare the dressing by adding the lime juice, cooled sugar water, fish sauce, curry paste, cilantro stems and rehydrated shrimp
Add some of the dressing over the noodles, followed by the spring onion, carrot, spring onion bulbs, sliced chilli, cucumber, cooked shrimp & mixed herbs and toss
Add more dressing to taste
