Mix the cheddar with the butter with a fork
Add the parmesan, hot sauce and pepper and blend well
Add the flour in additions and mix well
Add the ice water a tbsp at a time, till absorbed and you are able to knead the dough
Cover and chill for 30 mins
Roll out using additional flour if necessary
Cut using shapes
Using the back of a bamboo skewer, make a few holes in the cracker to help it to bake faster
Place in a preheated oven at 350 degrees
Bake for 20 to 30 mins (less or more depending on the size of the cracker)
Cool once baked
Pipe a dollop of cream cheese over the top
Add the finely chopped deli meat, some chopped parsley, a cheese star and another sprig of parsley before serving
