Achari Kebab

  • Achari Marinade
  • 5 Kashmiri Chillies
  • 1 tbsp Fennel seeds
  • 1 tbsp Fenugreek seeds
  • 1 tbsp black Mustard seeds
  • 1 tbsp black Onion seeds
  • 1 tbsp Cumin seeds
  • 2 tbsps ground Ginger and Garlic paste
  • 2 tbsps Oil
  • 3 tbsps Mustard Oil
  • 1/4 cup Curry leaves
  • 1/2 tsp Turmeric
  • 1 tbsp Tomato paste
  • 1/4 cup Water
  • 2 lbs boneless Chicken thigh
  • Salt to taste
  • Sprinkle of Fennel Cumin & black Onion seeds
  • Lemon wedges
  • Onion quarters
  • 2 tbsps regular & Mustard Oil mixed for basting


  • Lightly toast the dried chillies and all the whole spice seeds
  • Cool and going to a powder, add the ginger and garlic paste and 1 tbsps of the regular oil and 2 of the mustard oil and grind with a little water if too dry
  • In a saute pan heat up the rest of the oils and add the curry leaves and ground paste
  • Add turmeric and the tomato paste and the water and cook for a minute or so and allow to cool completely
  • Cut the chicken into cubes and add the achari masala and marinate it overnight
  • Skewer this with some wedges of lemon and quarters of onion
  • Sprinkle with some fennel, cumin & black onion seeds
  • Heat the BBQ and grill it on one side before flipping it over o all sides to cook
  • In between baste with a mixture of regular and mustard oil
