Crab Ambotik

Ingredients
  

Masala
  • 10 Kashmiri Chillies
  • 10 Peppercorns
  • 2 green Cardamons
  • 4 Cloves
  • 1/2 tsp Cumin seeds
  • 1 tsp Mustard seeds
  • 1 inch piece Ginger
  • 6 cloves Garlic
  • 1 tsp Turmeric
  • 2 tbsps of Vinegar
  • 1 cup soaking liquid
Gravy
  • 1/4 cup Oil
  • 1 cup diced Onion
  • Prepared Masala
  • 3/4 cup Tomato puree 3 small Blanched Tomatoes
  • Tamarind in 1 cup Water
  • Salt to taste
  • 3-4 Kokum petals
  • 1 cup Water
  • 1 lb Crab

Method
 

  1. Soak the Chillies for 30 mins in hot Water
  2. Grind together with the rest of the masala ingredients
  3. Heat some Oil and saute the Onion
  4. Add the pureed masala and add Water in the jar
  5. Add the pureed Tomatoes
  6. Add Tamarind pulp and Salt
  7. Add the Kokum
  8. Cook this gravy for 30 mins so it thickens
  9. Taste for Salt & Seasoning and add the Crab and cook
