Lemon Pickle

Ingredients
  

  • 6 Lemons
  • 2 tsps Fenugreek seeds
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds
  • 1 tsp Mustard seeds
  • 10 Kashmiri Chillies
  • 15 regular Chillies
  • 1/4 cup each Ginger & Garlic
  • 3/4 cup Vinegar
  • 1/4 cup Oil
  • 1 green Chilli
  • Add all the ground paste and cook this for a few minutes
  • 1/4 cup Water

Method
 

  1. Boil the Lemons for 20 mins and then allow to cool
  2. Roast all the seeds and then add the chillies
  3. Grind to a powder
  4. Add the ginger and garlic and then the vinegar and grind to a paste
  5. Heat the oil, add the chilli and then the ground paste and fry
  6. Add the water
  7. Quarter the lemons and add to the pot and cook for a minute
  8. Bottle and store for 1 - 2 months till it matures
