Prepare the Batter: Drain the soaked moong dal and grind it coarsely without adding water or just a little if needed.
Mix Ingredients: Transfer the batter to a bowl, add chopped onions, green chilies, ginger, cumin seeds, coriander leaves, garam masala, turmeric, salt, and asafoetida. Mix well.
Heat the Oil: Heat oil in a deep pan or kadhai on medium heat.
Shape the Vadas: Take small portions of the batter and drop them into the hot oil carefully.
Fry Until Golden: Fry in batches until the vadas turn golden brown and crispy. Remove and drain on paper towels.
Serve Hot: Enjoy with mint chutney, tamarind chutney, or tomato ketchup.
