Peanut chutney

Ingredients
  

  • 2 tsps Chana Dhal
  • 2 tsps Urad dhal
  • 1 cup Peanuts
  • 4 cloves Garlic
  • 2 green Chillies
  • 2 tbsps Sesame seeds
  • 1/4 cup Curry leaves
  • 1 cup sliced Onion
  • Pinch Hing / Asafoetida
  • Salt
  • Pinch Jaggery
  • 2 inch piece Tamarind in 1/2 cup hot Water
Tadka
  • 1 tsp Chana dal
  • 1 tsp Urad dal
  • Allow this to cook for a while in the hot oil so the Chana dal is roasted
  • 2 Red Chillies
  • 1/4 cup Curry leaves
  • 1 green Chilli sliced

Method
 

  1. Roast Chana & Urad Dhal till they turn color and is cooked, remove and keep aside
  2. Add the raw Peanuts and roast them, then add in the Garlic, green Chillies, Sesame seeds, Curry leaves and sliced Onions.
  3. Cook the Onion till it gets translucent
  4. Add Salt to taste and a pinch Jaggery
  5. Transfer this to a food processor and allow to cool
  6. Add a pinch of Hing - this has numerous health benefits
  7. Add the soaked Tamarind and the water and process
  8. Prepare the tadka by sautéing all the tadka together and pour over the Peanut Chutney
