Potato Bhaji

Ingredients
  

  • 1 kg Potatoes
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Cumin seeds
  • 1 tbsp Chana Dhal
  • 1 tbsp finely chopped Ginger
  • 1 tbsp Urad Dhal
  • 1/4 cup Peanuts
  • 1/2 cup onion sliced
  • 3 green Chilies sliced
  • 1/4 cup Curry leaves
  • 1/2 cup Tomato finely chopped
  • Salt to taste
  • ½ teaspoon Chilli powder
  • ½ teaspoon Turmeric powder
  • 1/2 tsp ground black Pepper
  • ¼ cup water
  • 1/4 chopped Coriander leaves

Method
 

  1. Boil the Potatoes
  2. Meanwhile, heat some Oil and add the Mustard & Cumin seeds, followed by the Chana Dhal, Ginger and Urad Dhal
  3. Add the Peanuts and Onion
  4. Saute the Onion till it’s translucent
  5. Next add the Chillies & Curry leaves
  6. Next add the Tomato and cook till mushy
  7. Add Salt to taste
  8. Add Chilli powder, Turmeric & ground black Pepper
  9. Add the cooked Potato in
  10. Ladle in a few tbsps of the cooking water
  11. Finish off with chopped Coriander
