Lightly toast the Semolina and allow to cool
Separate the Eggs and whisk the egg whites till stiff
Cream the Butter & Sugar together
Add the Egg yolks and whisk
Add the Coconut and mix
Add the crushed Cardamom seeds
Add the Semolina in additions
Fold in the Egg Whites and chill for 2 - 6 hours
Divide the dough - if it’s too sticky, roll in a little Flour
Sprinkle some semolina on your baking pan if desired
Make a criss cross pattern
Bake in a 350 oven for about 45 mins
