Method
- Lightly toast the Semolina and allow to cool
- Separate the Eggs and whisk the egg whites till stiff
- Cream the Butter & Sugar together
- Add the Egg yolks and whisk
- Add the Coconut and mix
- Add the crushed Cardamom seeds
- Add the Semolina in additions
- Fold in the Egg Whites and chill for 2 - 6 hours
- Divide the dough - if it’s too sticky, roll in a little Flour
- Sprinkle some semolina on your baking pan if desired
- Make a criss cross pattern
- Bake in a 350 oven for about 45 mins
