Bolinhas - Goan Fresh Coconut Cookies

Ingredients
  

  • 250 gms Semolina
  • 3 extra large egg whites 105 gms
  • 60 gms room temp Butter
  • 250 gms Sugar
  • 3 Egg yolks 60 gms
  • 250 gms finely grated fresh Coconut
  • Crushed seeds of 4 Cardamoms
  • Extra Semolina and Flour if needed

Method
 

  1. Lightly toast the Semolina and allow to cool
  2. Separate the Eggs and whisk the egg whites till stiff
  3. Cream the Butter & Sugar together
  4. Add the Egg yolks and whisk
  5. Add the Coconut and mix
  6. Add the crushed Cardamom seeds
  7. Add the Semolina in additions
  8. Fold in the Egg Whites and chill for 2 - 6 hours
  9. Divide the dough - if it’s too sticky, roll in a little Flour
  10. Sprinkle some semolina on your baking pan if desired
  11. Make a criss cross pattern
  12. Bake in a 350 oven for about 45 mins
