These Goan coconut cookies called Bolinhas are crispy on the outside and moist and delicious on the inside. First Semolina is roasted and cooled. Egg white is beaten till white and foamy and kept aside. Butter & Sugar are then creamed together and egg yolks are added and incorporated into the butter and sugar. Fresh grated Coconut is added and mixed in together with crushed Cardamom seeds. The roasted Semolina is added in additions and finally the egg white is folded in. This mixture is chilled before dividing and it’s baked. These cookies are appreciated for their soft texture and sweet taste. They are a popular treat in Goa and are often shared during parties and celebrations.

Bolinhas – Goan Fresh Coconut Cookies

Ingredients
  

  • 250 gms Semolina
  • 3 extra large egg whites 105 gms
  • 60 gms room temp Butter
  • 250 gms Sugar
  • 3 Egg yolks 60 gms
  • 250 gms finely grated fresh Coconut
  • Crushed seeds of 4 Cardamoms
  • Extra Semolina and Flour if needed

Instructions
 

  • Lightly toast the Semolina and allow to cool
  • Separate the Eggs and whisk the egg whites till stiff
  • Cream the Butter & Sugar together
  • Add the Egg yolks and whisk
  • Add the Coconut and mix
  • Add the crushed Cardamom seeds
  • Add the Semolina in additions
  • Fold in the Egg Whites and chill for 2 – 6 hours
  • Divide the dough – if it’s too sticky, roll in a little Flour
  • Sprinkle some semolina on your baking pan if desired
  • Make a criss cross pattern
  • Bake in a 350 oven for about 45 mins
