chickencurrry_h5I’m very close to my annoying little brother and I hate that he lives miles away from me in Chicago. He’s a very busy man, who travels all the time and he and his wife have three kids under 4 and two of them are twin girls. Although he loves to goof around and make funny videos and sit around strumming his guitar, he’s so busy packing, unpacking, changing diapers and entertaining the kids, that he never has enough time to prepare a home cooked meal. Because of their busy lifestyle with the little ones, meals are often something picked up from a store and eaten bites at a time at on the kitchen countertop. Whenever I visit, I treat him to some home cooking and he really enjoys that.

Making a curry does not have to be a huge ordeal and you will see in the recipe as well as the video in this post that simple ingredients can turn into a wonderful satisfying meal. This curry includes a luscious yogurt folded in, but you can easily use Coconut cream to make it dairy free. The use of cubed boneless Chicken breast, cook fast and will give him enough time to run around and complete all his other ‘daddy’ chores like spend time with his son and their crazy Lego city.

Easy Chicken Curry

Ingredients

  • 1/2 Turmeric
  • 1/2 Chilli powder
  • 1 lb boneless Chicken
  • Oil
  • 1 cup diced Onions
  • 1 green Green finely chopped
  • 1 tbsp each Ginger & Garlic paste
  • 1 tsp each – Turmeric, Chilli, Turmeric, Garam Masala & Cumin powder
  • 3 ripe tomatoes(2 cups)
  • 1 cup Yogurt
  • Salt to taste

Instructions

  1. Season the boneless Chicken cubes with some salt, 1/2 tsp of chilli powder and 1/2 tsp of Turmeric
  2. Heat a couple of tbsps of oil in a pan and sauté 1 lb of boneless Chicken thigh meat and just sear on both sides to get a nice color and the Chicken is half cooked
  3. Remove this and keep it aside
  4. Add the diced red onion to the same pot together with the green Chilli
  5. Once the onions are nice and brown, add the ginger & garlic paste, Chilli powder, Turmeric, Cumin powder and Garam Masala.
  6. Add 3 diced ripe tomatoes, add salt, mix it and cover to cook for a few minutes till the tomatoes are nice and mushy
  7. Add the half cooked Chicken, more and continue to cook for another 5 mins
  8. Fold in one cup of yogurt and taste for salt and seasoning, and finally finish with chopped coriander.

Chicken Korma – Tender chicken in a creamy gravy

When it comes to a Korma recipe, there are so many variations from the use of yogurt, cream, nut pastes and coconut cream. Some gravies are dark and earthy and others are light and creamy. This recipe uses cashew nut paste that makes this gravy creamy and luxurious. If you love Indian food sans the spice, this recipe is perfect for you!

Chicken Korma – Tender chicken in a creamy gravy

Ingredients

  • 1 full chicken cut in pieces approx 2 lbs (Watch how to cut a chicken video)
  • 1 tsp chilli powder
  • 1/2 tsp turmeric
  • Juice of half a lemon
  • 2 tbsps ginger and garlic paste
  • Salt and white pepper powder
  • 1/2 cup raw unsalted cashew nuts
  • 1 tsp white poppy seeds
  • 1 tsp white melon seeds
  • 1/2 cup stirred yogurt
  • 2 tbsps ghee
  • 2 green chillies slit in half
  • 3 cardamoms
  • 6 cloves
  • 2 bay leaves
  • 1 tsp each chilli, cumin, garam masala, white pepper
  • 1/2 tsp turmeric
  • 1/2 – 1 cup heavy cream
  • Salt
  • White pepper

Instructions

  1. Soak the cashewnuts, poppy and melon seeds for half and hour
  2. Marinate the chicken with lemon juice, 1 tsp chilli powder, 1/2 tsp turmeric, salt and pepper for 30 mins to overnight
  3. Grind the seeds to a smooth paste
  4. In a pan, heat 2 tbsps of ghee and saute 2 slit green chillies, 3 cardamoms, 6 cloves and 2 bay leaves
  5. Add the nut paste and stir quickly so it doesn't burn
  6. Add the yogurt
  7. Strain the paste and discard all the whole spices
  8. In another saute pan, lightly brown the chicken
  9. Add the nut paste.
  10. Add the rest of the powdered spices
  11. Cook for 30 to 40 mins, adding water as required and stirring frequently
  12. Finish with heavy or whipping cream

Mild Chicken Curry With Yogurt

Eating a chicken curry doesn’t have to have you breathing fire like a dragon. This curry is mildly spiced and finished with yogurt.

Chicken Curry With Yogurt

Ingredients

  • 1 whole chicken cut into pieces
  • Juice of half a lemon
  • 2 tsps of ginger and garlic paste
  • 1 tsp each turmeric, chilli powder and garam masala
  • salt and pepper to taste
  • 2 tsps yogurt
  • Oil
  • 2 Red Kashmiri chillies
  • 1 sliced red onion
  • 1 tsp black mustard seeds
  • 2 tsps ginger and garlic paste
  • 1/2 tsp turmeric and garam masala
  • 1 large finely chopped tomato

Instructions

  1. Marinate the chicken for 30 mins to overnight with the lemon juice, ginger and garlic paste, spices, salt pepper and yogurt.
  2. In a saute pan heat some oil and add the red chillies, followed by the onion and mustard seeds.
  3. Cook the onions till golden brown and remove from pan.
  4. In the same pan add the chicken and cook for a few minutes till nice and golden brown.
  5. Add more ginger and garlic paste and the additional spice powders followed by the tomatoes.
  6. Cook this for 30 mins, stirring frequently and adding water if required.
  7. Finish with a cup of stirred yogurt by incorporating a few tbsps at a time and folding it into the gravy.
