Back to School Lunches

Ingredients

  • 3 Chicken breasts - 1 lb approx 500 gms
  • 1 tsp each Salt & Pepper
  • 1 egg
  • 1 cup Pasta
  • 1 cup Express Rice (or regular rice)
  • Butter optional
  • 6 Cheese Cubes
  • 1 tsp Onion powder or granules/flakes
  • 1 tsp Paprika
  • 1 tsp Mustard powder
  • 2 tbsps diced Parsley
  • 1/2 - 3/4 cup Panko breadcrumbs
  • Pasta sauce 680 ml, 24 oz
  • Pinch Salt
  • 1/4 cup Parsley
  • 1/2 cup Water
  • 1/4 cup sliced Mushrooms
  • 1/2 cup Spinach

Instructions

  1. Place the chicken breasts, salt, pepper & egg in a food processor and grind it till it's still chunky but holding together
  2. Divide the chicken into 3
  3. For the Cheesy Chicken Bombs, form meatballs with an oiled hand and simply insert a cheese cube in each
  4. For the Chicken Cutlets, add onion powder, paprika, mustard and parsley and divide into 4
  5. Drop into the panko breadcrumbs and flatten to form cutlets
  6. Add the Cheesy Bombs and the Cutlets to a baking tray and bake in a 350 degree oven for 30 mins, flipping over halfway
  7. Cook the pasta according to the package instructions
  8. Cook the rice according to the package instructions
  9. Heat the pasta sauce and add salt and parsley
  10. Reserve a few tbsps of the plain pasta sauce
  11. Add the cooked pasta in, let the pasta cook for another minute and fish out and reserve all the pasta
  12. Add 1/2 cup water to loosen up the sauce
  13. With the last portion of the ground chicken, form meatballs with an oiled hand and drop gently into the sauce
  14. Cover and allow to cook for 5 minutes and then gently flip over and cook again
  15. Add the mushrooms & spinach and cook
  16. Divide into 3 lunchboxes as shown in the video!

Butter Chicken and all it’s versions are always received well. If you’ve been following my posts and my channel, you will know that I love making my Butter Chicken from scratch. I like to grill my chicken, blanche and puree fresh tomatoes, blend my spices and finish it off with some luxurious cream. A weeknight meal though is a whole other story. I burst into my home exhausted with the dark cloud of prepping dinner on my mind. Almost immediately the family asks ‘What’s for Dinner?” and if I haven’t had the time to meal prep, I’m in a lot of trouble.

 

Over time, I’ve learned how to use pantry staples creatively to create shortcuts to great meals. This recipe is a testament to that! I always have canned soup in my pantry, they’re not just great when you want to make a soup but you can also use this to prepare other meals. In this recipe, I’m going to use the CAMPBELL’S® Roasted Red Pepper & Tomato to substitute the pureed Tomatoes and the CAMPBELL’S® No Salt Added Cream of Chicken to substitute the cream. This delicious Butter Chicken is then going to be tossed together with Scoobi doo or Cavatappi noodles, smothered in cheese and baked.

 

This is a hearty recipe that is delicious for adults and kids alike. If you have kids that are afraid to try new things, this is a great way to introduce them to new flavors.

Butter Chicken Mac & Cheese

Ingredients

  • 1 lb Chicken breasts cut in medium cubes
  • 1 tsp minced Garlic
  • 2 tbsps Tandoori spice
  • 2 tbsps Yogurt
  • Salt & Pepper to taste
  • ½ tbsp dried Fenugreek (optional)
  • 400 gms Pasta (Macaroni, Rotini, Scoobi Do or your choice)
  • 1 can CAMPBELL'S® Condensed Roasted Red Pepper & Tomato
  • 1/2 can CAMPBELL'S® Condensed No Salt Added Cream of Chicken
  • 2 tbsp Butter
  • ¼ cup Oil
  • Water as required
  • 1 cup diced Onions
  • 1 tsp minced Garlic
  • 1 tsp minced green Chili (optional)
  • 1 tbsp chopped Coriander
  • 1 tsps each Chili & Cumin powder
  • ½ tsp Turmeric
  • Salt to taste
  • 2 cups Grated Cheese

Instructions

  1. Marinate the Chicken in the crushed garlic, Tandoori spice, Yogurt, Salt & Pepper and Fenugreek and allow to marinate for 15 mins to overnight
  2. Heat up the Oil in a sauté pan and cook the Chicken till about ½ done and remove and keep aside
  3. In the same pot add the butter and sauté the Onion, Garlic, Chili
  4. Add all the spices, followed by the Tomato soup and stir well to incorporate. Fill up the empty soup can with water and add it to the pot and bring to the boil
  5. Add the partially cooked chicken, turn down the heat and allow it to simmer
  6. Add a half can of the Chicken soup and a bit more water as required
  7. Add the Coriander
  8. Cook Pasta according to the package instructions and drain
  9. Fold in Pasta and about a half cup of the Cheese
  10. Taste for Salt and add to taste
  11. Transfer to an oven proof dish and cover with the rest of the Cheese
  12. Bake for 20 - 30 minutes till bubbly and golden brown

Spinach & Chicken Fettucine

Spinach is a wonderful ingredient to get into your recipes. It’s packed with Iron and other nutrients. In this recipe for a quick Easy Weeknight Meal, I added a leftover bunch of Spinach to enhance my pasta sauce as well as a marinade for some Chicken.

Spinach & Chicken Fettucine

Ingredients

  • 1 bunch Spinach – 1 cup when pureed
  • 3-4 Mushrooms
  • 200 gms Fettucine
  • 1 tsp Red Chilli flakes
  • 1 tsp Onion granules
  • Salt
  • 1 tsp Dijon Mustard
  • 8 oz/ 500 gms Chicken thighs
  • I stick butter
  • 1-2 cups Milk
  • 4 tbsps Flour

Instructions

  1. Blanch Spinach in hot water and drain to cool
  2. In the same water add Fettucine
  3. Cook till al dente
  4. Pound boneless Chicken thighs to flatten
  5. Puree the Spinach once cooled
  6. Marinate chicken – Salt, Dijon mustard, onion & chilli flakes
  7. Add 2 tbsps of the Spinach puree
  8. Heat Oil in a saute pan
  9. Saute Chicken till brown on outside, but ensure it’s cooked
  10. Wipe down the saute pan
  11. Heat ½ stick butter
  12. Saute mushrooms
  13. Add 4 tsps flour & whisk in between.
  14. Add 2 - 3 cups milk – little at a time
  15. Pour in the rest of the Spinach puree
  16. Let the sauce thicken for a few minutes
  17. Add Fettucine
  18. Top with chicken
