Just saying the word Kebab makes my mouth water.. now imagine turning a Kebab into a delicious mini slider! These mini delights are a great hit in my house. The best part is that they are best cooked from frozen so you can prepare the patties ahead of time and then just cook to order. I once made and froze 70 of these ahead of time, grilled them an hour before, warmed them up in my oven and just assembled before serving.

 

I’m pairing the kebab with a delicious homemade Green Chutney, but you could easily use any condiment of your choice. I’m also using a store bought slider bun that’s available everywhere at this time of year but I once served this at a Christmas event and just made my own buns.

 

In this recipe, I used Beef but you can easily use, Beef & Pork, Lamb or Mutton.

Ingredients

  • 2 lbs medium or regular ground Beef (sub Lamb or Mutton)
  • 1/2 cup finely diced Onion
  • 2 tsps each Garlic & Ginger paste
  • 1 tsp each Cumin, Chilli & Turmeric powder
  • 1 whole Egg
  • 1 - 2 tsps Salt
  • 1/2 cup of chopped Coriander
  • Optional 1/2 tsp each Chilli & Cumin powder

Instructions

  1. Mix all the above ingredients except the optional extra chilli & cumin together
  2. I always like to pan fry a tiny bit to taste the patty
  3. If needed, add extra spices and salt
  4. Using your hands make a patty shape OR watch the video to see how I use a burger press to make these little mini burgers
  5. Chill in the freezer for 1 hr
  6. Remove from the freezer, remove the plastic inserts and stack between squares of parchment or wax paper
  7. Bag and freeze
  8. When ready to cook, just lightly oil your grill and cook on both sides
  9. Stack the patty on a bun, add some chutney and a slice of tomato and enjoy!

Chicken TIKKA

When it comes to popular Indian kebabs, Chicken Tikka is right up there. Typically these kebabs are boneless and cooked in a clay oven or a tandoor. The marinade and method of cooking is very similar to Tandoori Chicken that is usually served bone in. I’d like to believe that this original recipe comes from India but it could have also originated from it’s surrounding countries. The popular Chicken Tikka Masala, a gravy version of this dish was invented by a Pakistani Chef in Glasgow. Although Chicken Tikka is usually prepared boneless, they are also made with bone in chicken similar to Tandoori Chicken. It’s distinct taste comes from the use of mustard oil in the marinade paired with the smokiness of the Tandoor. Since most people don’t have Tandoors in their homes, I will be cooking this on my BBQ. You can also prepare this in the oven if you don’t have access to a bbq.
I’m using 1 lb chunks of boneless Chicken in this recipe and will marinate this meat twice. The first marinade consists of 1 tbsp each Ginger and Garlic paste, followed by juice of 1/2 Lemon, salt to taste and 1/2 tsp of Chilli powder. I like to leave this overnight in the fridge or at least for 30 mins.
Next heat some oil and add 2 tbsps of Gram flour. We call this Besan or Chana ka atta. Mix this in with the oil and leave it to cool. To the Chicken I’m now going to add the second marinade. Yogurt, 1/2 tsp each Chilli, Haldi, Garam Masala, Kasuri methi. Add the gram flour paste and mustard oil. Add a little more black salt. I also wanted to mention that I used Kashmiri Chilli powder in this recipe – Kashmiri Chillies are famous for their colour and are not too spicy. Notice the difference between Kashmiri Chilli powder and standard Chilli powder. If you’re using just regular Chilli powder use a little less as it’s much much spicier!
Add the gram flour and 2 tbsps of Mustard oil
I like to marinate this as long as possible to ensure the best flavour anywhere from 1 hr to overnight. Chicken Tikka Masala s often made with bbq’s onions and green peppers so I like to add this to my Chicken Tikka as well.
A note about wooden skewers. I usually do soak them in water to prevent them from burning, but I find that they burn anyway! All it does is extend the time that it takes to finally burn. If I’m going to pull the chicken off the skewers anyway before I serve it, I don’t even bother to soak it, but if I’m going to present them on skewers, I will just cover them with foil. You could also, just slide in a new skewer once cooked, and pop out the old one OR just use metal skewers.

Ingredients

  • 2-3 tbsps regular oil
  • 2 tbsps Gram flour
  • 3 tbsps cup beaten yogurt
  • 1 tsps Chilli powder
  • 1/2 tsp Garam Masala
  • 1 tsp Kasuri Methi
  • 1/2 tsp Turmeric
  • 2 tbsps Mustard Oil
  • Salt to taste
  • 1/4 tsp Black salt
  • Green Pepper
  • Onion quarters

Pahadi kebab

PahadiKebabs_HNTI am so excited to bring you this recipe today. Pahadi kebabs are delicious nuggets of chicken marinated in mint, coriander, garlic and ginger and tenderized with hung yogurt.

This is skewered and barbecued to delicious perfection. I first tried this in India when my dad ordered some Indian takeout from a local kebab place and I was hooked. As soon as I got back I had to try to recreate it and I’m happy to report that I got it all figured out. Although this kebab looks very similar to a hare kebab or a hariyali kebab, it does have a distinct taste that sets it apart.

I’m using hung yogurt in this recipe, this just means that I’m going to remove all the water from the yogurt by placing a 1/4 cup in some cheese cloth and squeezing it.

I’m also using fresh mint which at this time of the year my garden is just bursting with the delicious herb. Let’s look at the ingredients

Pahadi kebab

Ingredients

  • 2 oz each fresh Mint and Coriander
  • 1/2 cup yogurt, hung in a cheesecloth
  • 6 cloves Garlic
  • 3 tbsps chopped Ginger
  • 3 fresh green chillies
  • Juice of one Lime
  • 2 lbs boneless Chicken cubes
  • Oil

Instructions

  1. Set the yogurt in some cheesecloth and squeeze all the water out of it
  2. Grind together the Lime juice, Ginger, Garlic and Chillies, Salt & Pepper
  3. Add the green paste to the washed and cleaned Chicken
  4. Add the yogurt, mix and leave to marinate overnight
  5. Before skewering and cooking on the grill add some oil and more salt to taste
  6. After the Pahadi kebabs are cooked, sprinkle with some Garam Masala and serve
