Ingredients
  

Pita - 80 gms or 2.8 oz
  • Olive Oil
  • Salt
Dressing
  • 3 tbsps Olive Oil
  • 2 tbsps Lemon juice
  • 1 tbsp crushed Garlic
  • 1 tsp Sumac
  • 1 tsp Pomegranate Molasses
  • 1/2 tsp dried Mint
  • 1/2 tsp Salt
  • 1/2 tsp fresh cracked Pepper
Salad
  • 2 cups chopped Lettuce
  • 1 cup chopped Parsley & Mint
  • 1 cup Tomato
  • 1/2 cup sliced Spring Onions
  • 2 cups sliced Cucumbers
  • 1/2 cup diced green Pepper
  • 1/2 cup sliced Radish

Method
 

  1. Either shallow fry the pieces of pita or bake in the oven
  2. Mix all the dressing ingredients together
  3. Add all the salad ingredients to a bowl
  4. Add the dressing and toss
  5. Top with the pita and enjoy
