This Fattoush Salad is a combination of fresh healthy ingredients, it gets it’s amazing flavor from a blend of olive oil, lemon juice, crushed garlic, sumac, pomegranate molasses, dried mint, salt & pepper.

This salad is so simple to make, it’s packed with veggies and drizzled with a delicious homemade dressing, but the piece de resistance is the cripsy pita on top. I’m going to show you two ways to make the pita, baked and fried and you can decide how you want to make them!

My love for Arabic food comes from living in the Middle East. The flavours are so amazing and they blend so well together. Fattoush means pieces. This is a great make ahead salad, the dressing & pita can be made ahead and most of the veggies can be chopped a day ahead, just add the tomatoes before you toss the salad.

Ingredients
  

Pita – 80 gms or 2.8 oz

  • Olive Oil
  • Salt

Dressing

  • 3 tbsps Olive Oil
  • 2 tbsps Lemon juice
  • 1 tbsp crushed Garlic
  • 1 tsp Sumac
  • 1 tsp Pomegranate Molasses
  • 1/2 tsp dried Mint
  • 1/2 tsp Salt
  • 1/2 tsp fresh cracked Pepper

Salad

  • 2 cups chopped Lettuce
  • 1 cup chopped Parsley & Mint
  • 1 cup Tomato
  • 1/2 cup sliced Spring Onions
  • 2 cups sliced Cucumbers
  • 1/2 cup diced green Pepper
  • 1/2 cup sliced Radish

Instructions
 

  • Either shallow fry the pieces of pita or bake in the oven
  • Mix all the dressing ingredients together
  • Add all the salad ingredients to a bowl
  • Add the dressing and toss
  • Top with the pita and enjoy
