The hardest part of this recipe is spelling Mediterranean correctly. This salad is simple, it borrows from ingredients and flavours from the region from the salad to the pan fried crusty Chicken on top. This has it all – Chicken, Greens, Tomatoes, Olives, Pine nuts, beans and is tossed in a homemade dressing – it’s perfect!

Middle Eastern Salad

Ingredients

  • Dressing
  • 4 – 6 tbsps Olive Oil
  • Juice of 1/2 Lemon
  • 1 tbsp minced Garlic
  • 1/2 tsp Oregano
  • 1 tsp Aleppo Chilli powder
  • 1/2 tsp dried Mint
  • 1/2 tsp Salt
  • 2 Chicken breasts here 1 lb each
  • 1 tsp Salt or to taste
  • 1 tbsp Chicken Shawarma spice
  • 1 tsp Aleppo Chilli powder
  • 1 tbsp minced Garlic
  • 1 tsp Pomegranate Molasses
  • Salad
  • 1 cup mixed Greens
  • 2 cups Parsley leaves
  • 1 cup halved Cherry Tomatoes
  • 1 cup cubed Cucumbers
  • 1 cup mixed beans
  • 2 tbsps sliced Olives
  • 2 tbsps Arabic style pickled Turnip
  • 1 cup green Pepper
  • 1 cup Pinenuts and roasted Chickpeas

Instructions

  • Mix all the dressing ingredients together
  • Make slits in the chicken breasts and mix together with the marinade
  • Pan fry the chicken breasts on both sides till cooked
  • Mix together all the salad ingredients and toss with as much dressing as per your taste
  • Serve with the chicken and enjoy
