Goan Beef Macaroni Stew

Ingredients
  

  • 2 cups cubed Potatoes
  • 1 cup elbow Macaroni
  • 2 inches Cinnamon
  • 4 Cardamom
  • 2 Cloves
  • 2 tbsps Oil
  • 1 lb stewing Beef
  • 1.5 - 2 cups Water
  • 2 Beef Buillon cubes 21 gms
  • 1/2 cup Butter
  • 1 cup finely diced Onion
  • 2 tbsps Green Chillies
  • 2 tbsps Ginger & Garlic paste
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Chilli powder
  • 1 cup diced Tomatoes
  • 1 cup Peas
  • 1 cup diced Carrots

Method
 

  1. Boil the potatoes in boiling salted water till they are half cooked and drain
  2. Cook the macaroni as per the package instructions and drain
  3. In a pressure cooker heat the oil and saute the whole spices for a minute
  4. Add the Beef and cover with water
  5. Add the stock cubes, press down with the back of a spoon and pressure cook for 20 mins
  6. Once done, release the pressure, open the lid and allow to cool
  7. In a saute pan, melt the butter and saute the onions
  8. Add the green chilli and the ginger and garlic paste
  9. Add all the powdered spices followed by the tomatoes
  10. Cover and cook till the tomatoes are soft
  11. Add the beef pieces, carefully discarding all the whole spices
  12. Strain the stock as well into the saute pan
  13. Add the potatoes and allow to complete the cooking
  14. Add the peas, followed by the carrots
  15. Finally add the macaroni and cook covered for a minute and serve
