Tender chunks of meat are sautéed together in a base gravy with stock, spices, potatoes, peas, carrots and macaroni. This is comfort food at its best! Funnily enough this recipe that seems so simple and comforting was typically served at special occasions. The recipes and preparation process varies but the end result contains pretty much the same ingredients meat, potatoes, vegetables and macaroni.

Some cook all the ingredients separately and just put it together at the end and some recipes call for all the ingredients to be cooked together.

I like to take a practical approach to creating recipes, creating shortcuts where I can and avoid eating unnecessary calories and starches – not that this is a low cal dish by any means. Some recipes call for an equal proportion of Beef and Pork, while some incorporate Goan chorizo. There are also some parts of India where beef is banned and only Pork is used. You can take a lot of liberties with this dish and it will always turn out amazing!

Goan Beef Macaroni Stew

Ingredients
  

  • 2 cups cubed Potatoes
  • 1 cup elbow Macaroni
  • 2 inches Cinnamon
  • 4 Cardamom
  • 2 Cloves
  • 2 tbsps Oil
  • 1 lb stewing Beef
  • 1.5 – 2 cups Water
  • 2 Beef Buillon cubes 21 gms
  • 1/2 cup Butter
  • 1 cup finely diced Onion
  • 2 tbsps Green Chillies
  • 2 tbsps Ginger & Garlic paste
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1/2 tsp Chilli powder
  • 1 cup diced Tomatoes
  • 1 cup Peas
  • 1 cup diced Carrots

Instructions
 

  • Boil the potatoes in boiling salted water till they are half cooked and drain
  • Cook the macaroni as per the package instructions and drain
  • In a pressure cooker heat the oil and saute the whole spices for a minute
  • Add the Beef and cover with water
  • Add the stock cubes, press down with the back of a spoon and pressure cook for 20 mins
  • Once done, release the pressure, open the lid and allow to cool
  • In a saute pan, melt the butter and saute the onions
  • Add the green chilli and the ginger and garlic paste
  • Add all the powdered spices followed by the tomatoes
  • Cover and cook till the tomatoes are soft
  • Add the beef pieces, carefully discarding all the whole spices
  • Strain the stock as well into the saute pan
  • Add the potatoes and allow to complete the cooking
  • Add the peas, followed by the carrots
  • Finally add the macaroni and cook covered for a minute and serve
