I’m made different versions of this salad over time – it’s super easy as most of the ingredients are pantry staples and you can add in any fresh ingredients on hand. In lockdown, I find myself making different versions of this often to feed the family. I have to young men at home and they can eat pasta like there’s no tomorrow. Enjoy!

In this recipe I used the sundried tomatoes that come in oil in the dressing. I find that they are much more pliable and easy on the processor blades when they are soft.

Cold Pasta Salad

Ingredients
  

Dressing
  • 1/4 cup sun-dried Tomatoes
  • 1/4 cup black Kalamata Olives
  • 1 tbsp Capers
  • 1/2 cup bottled roasted Peppers
  • 1 tbsp of Olive Oil
Pasta
  • 500 gms Penne
  • 1/4 cup chopped sundried Tomatoes
  • 1/4 cup black Olives
  • 1/2 cup halved cherry Tomatoes 1/2 cup chopped Parsley
  • 1/2 cup chopped Feta
  • 1/2 cup Parmesan
  • Salt and pepper to taste

Method
 

  1. Add all the dressing ingredients into the food processor and blend
  2. Cook the pasta in boiling salted water and drain
  3. Add the cooled pasta in a bowl and add the dressing and mix well
  4. Add the sun-dried tomatoes, olives, cherry tomatoes, parsley, feta, parmesan, salt & pepper to taste and serve cold
