As you all know, I’m an Instant Pot head, there’s nothing not to love as I use a pressure cooker often, but this is electric, safe and has a lot more functions besides pressure cooking!
My Instant Pot is 8 quarts but you can also make these recipes using a 6 quart. Here are some one pot recipes you will really want to try!
Mutton Ghee Roast
I absolutely adore south Indian curries, whether they come from Kerala or Mangalore, they are rich in spices and mellowed out typically with coconut. This Ghee roast does not contain cream like it’s north Indian counterparts but gets its rich buttery flavour from the ghee. This recipe uses almost 7 ½ tbsps. of Ghee. Check out the recipe!
Railway Mutton Curry
During the British Raj, this Mutton Curry originally a Bengali curry was served on the trains from Victoria Terminus (lovingly called VT by the Bombayites aka Mumbaikars) to Calcutta. Rumor has it that a British General found the curry too spicy. He asked the Chef to modify it for him. The Chef added Coconut and cream and served it to the General. He loved it so much that he requested this dish every single time and the name Railway Mutton, stuck.
Today it is made by the Anglo Indian community. Many recipes call for the Mutton and the Potatoes to be cooked seperately but I like my recipes to be practical and get the most flavour in less time. I am using my Instant Pot in this recipe but you can use a regular pressure cooker as well. Check out the recipe!
Lamb or Mutton Masala
Lamb or Mutton is cooked together with spices in a pressure cooker to make a delicious gravy with tender pieces of meat and is simmered together with half cooked potatoes. This is a basic recipe that can be prepared with Lamb or Mutton and it could even apply to Goat or Beef. The chunks of meat have some bone for great flavour and simple ingredients are used to achieve this delicious curry. Check out the recipe!
