Do you throw the stems and leaves of your beets away? You never will again – these are added to onions and spices,together with coconut, beet cubes and coriander and is ABSOLUTELY delish!

Beetroot Bhaji

Ingredients
  

  • 1/4 cup Oil
  • 1 cup finely diced onions
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds
  • 1/4 cup finely chopped Garlic
  • 1/2 tsp Turmeric
  • 1 tsp Chilli powder
  • 1 tsp Coriander powder
  • 3 cups finely diced Beetroot leaves & stems
  • Salt to taste
  • 1/2 cup grated Coconut
  • 1/2 cup cooked Beetroot cubes optional

Instructions
 

  • Heat the oil and add the onion and allow it to saute
  • Add the cumin and coriander seeds
  • Add the garlic and the powdered spices
  • Add the Beetroot stems and leaves
  • Add salt to taste
  • Add a touch of water if required
  • Add the Coconut
  • Add in 1/2 cup cooked Beetroot cubes
