I’m always looking for new recipes to try. Last week we hit up a Sri Lankan store for some Mutton rolls (mmmmmmm recipe in development). On the buffet they had fried Crab. These were swimming crabs, battered and deep fried. I do love crabs, but decided to try this with the incredible fresh Shrimp from the fishmonger next door. These are amazing and don’t take long to cook as well.

Fried Shrimp

Ingredients

  • 1 lb Shrimp
  • Salt to taste
  • Juice of 1/2 Lime
  • 1 tsp Ginger & Garlic paste
  • 1/2 tsp Turmeric
  • 1//2 tsp red Chilli powder

Batter

  • 1 cup of Gram or Chickpea flour
  • Water
  • Salt to taste
  • 1/2 cup sliced Onion
  • 1 tbsp green Chilli sliced
  • 1/2 tsp Turmeric
  • 1/2 tsp Chilli powder
  • 1/2 cup Curry leaves
  • 1/2 cup Coriander

Instructions

  • Devein the Shrimp, leaving the shells and head on
  • Marinate with salt, lime juice, ginger & garlic paste, turmeric & chilli powder
  • Prepare the batter by adding water to the flour just a little at a time till it’s not lumpy and is whipped through to get a pouring consistency
  • Add the rest of the batter ingredients
  • Mix the batter with the marinated shrimp and deep fry for a few minutes
