My latest creation! I knew my Modak mould was going to be multi purpose! These Marzipan beauties are stuffed with a Coconut & Nut filling. Recently on a trip to India, I purchased a few of these inexpensive plastic moulds. I made the traditional Modak recipe, but I couldn’t help feeling like there were a lot more creative ideas that could come of of using this humble tool.
As I was looking at this, I thought to myself, this would make a great Christmas tree, and so the idea was born.
Marzipan Christmas trees
Ingredients
Filling
- 3 tbsps Butter
- 1/2 cup 40 gms chopped Nuts Almonds & Walnuts
- 3/4 cup 50 gms sweet desiccated Coconut
- 1/4 cup 20 gms Raisins & dried Cranberries
- Water as required
Marzipan
- 100 gms ground Almonds or Almond flour
- 200 gms Icing sugar
- Few drops of Almond essence
- 2 Egg whites
- Food colouring
- 2 tbsps chopped pistachios optional
Instructions
- To prepare the filling heat the Butter, add the Nuts, Coconut, Raisins, Cranberries and a little Water and keep aside
- To make the Marzipan add the Almond flour and Icing Sugar to a food processor and process
- Add the Almond essence and Egg white
- If your paste is looking too wet, add more Icing sugar & almond flour and if it looks too dry, add a bit more egg white.
- Reserve a little for the stars and add a drop of food colouring in the batter
- Transfer to a microwaveable plate, cover with cling film
- Cook in the microwave for 10 seconds, 3 times
- Colour the reserved Marzipan with yellow food colouring
- Allow to cool and dry out so it can be easily moulded like clay
- Use extra icing sugar to help to knead it.
- Add the chopped Pistachios optional
- Just keep icing sugar handy to roll out the marzipan as it tends to get sticky when it warms up
- Using a star cutter, cut out star shapes and keep aside
- Take a portion of the green marzipan and push it into the mould, pressing on the sides and making sure there are no empty spots
- Using a small spoon, spoon the filling into the centre cavity
- Take more marzipan and seal it
- Using some tinted Royal Icing, secure the Stars and other decorations to the tree
