Many years ago, a Chinese co worker brought a delicious tasty Chicken Drumstick dish for an office potluck. It seemed to have a really simple marinade and a lot of Asian Chillies. The recipe was shared with me, but unfortunately I misplaced it, so I’ve tried to recreate this by taste. I’m not sure if it turned out exactly the same, but it’s a great simple recipe with simple ingredients, cooked in one wok — win win!
To make this recipe, Soya sauce & Pepper are added to Chicken Drumsticks and marinated. This is then added to a hot wok with sautéed Shallots & Garlic that were cooked in Sesame Oil. Red Chillies are added. The leftover marinade is added together with some Chicken stock. More Pepper and Chicken stock is added and the Drumsticks are rotated till cooked. I chose to use one wok as I really like to avoid washing up multiple pots, but you can finish cooking the Chicken Drumsticks in the oven.
Pepper & Chilli Chicken Drumsticks
Ingredients
- 10 – 11 Chicken drumsticks 800 gms
- 1/2 cup light Soya sauce
- 1 tbsp Shaoxing Wine
- 2-3 tbsps crushed Pepper
- 1 tbsp Sesame & regular Oil
- 1 cup sliced Shallots and saute
- 1/4 cup crushed Garlic
- 25 dried red Chillies
- 1/2 cup Chicken stock
Instructions
- Make deep cuts in the Chicken and marinate with the Soya sauce, Shaoxing Wine, 1 tbsp of the crushed Pepper and marinate it for about an hour
- Heat up a tbsp of Oil and add the Shallots and saute
- Add the Garlic and then the Drumsticks
- Saute the Drumsticks and keep turning them around
- Add the remaining marinade and keep cooking the Chicken for 25 – 30 mins
- Add more Oil and Pepper through the process
- I chose to finish cooking the drumsticks in the wok, but you can also transfer to the oven to finish cooking
- These drumsticks are full of flavour and so easy to make!
