Moong Dal Vada (or Moong Dal Pakora) is a crispy, deep-fried Indian snack made from soaked and ground moong dal (split green gram). It is a popular street food, especially during monsoon season, and is best enjoyed with green chutney or tamarind chutney.

Moong Dal Vadas

Ingredients
  

  • 1 cup yellow moong dal soaked for 3-4 hours
  • 2 tbsps green chilies finely chopped
  • 2 tbsps onion finely chopped
  • ½ inch ginger finely chopped
  • ½ tsp cumin seeds
  • ½ tsp mustard seeds
  • 2 tbsps curry leaves chopped
  • 2 tbsps coriander leaves chopped
  • ½ tsp chilli powder
  • ¼ tsp turmeric powder
  • Salt to taste
  • Oil for deep frying

Instructions
 

  • Prepare the Batter: Drain the soaked moong dal and grind it coarsely without adding water or just a little if needed.
  • Mix Ingredients: Transfer the batter to a bowl, add chopped onions, green chilies, ginger, cumin seeds, coriander leaves, garam masala, turmeric, salt, and asafoetida. Mix well.
  • Heat the Oil: Heat oil in a deep pan or kadhai on medium heat.
  • Shape the Vadas: Take small portions of the batter and drop them into the hot oil carefully.
  • Fry Until Golden: Fry in batches until the vadas turn golden brown and crispy. Remove and drain on paper towels.
  • Serve Hot: Enjoy with mint chutney, tamarind chutney, or tomato ketchup.
