I’m made different versions of this salad over time – it’s super easy as most of the ingredients are pantry staples and you can add in any fresh ingredients on hand. In lockdown, I find myself making different versions of this often to feed the family. I have to young men at home and they can eat pasta like there’s no tomorrow. Enjoy!
In this recipe I used the sundried tomatoes that come in oil in the dressing. I find that they are much more pliable and easy on the processor blades when they are soft.
Cold Pasta Salad
Ingredients
Dressing
- 1/4 cup sun-dried Tomatoes
- 1/4 cup black Kalamata Olives
- 1 tbsp Capers
- 1/2 cup bottled roasted Peppers
- 1 tbsp of Olive Oil
Pasta
- 500 gms Penne
- 1/4 cup chopped sundried Tomatoes
- 1/4 cup black Olives
- 1/2 cup halved cherry Tomatoes 1/2 cup chopped Parsley
- 1/2 cup chopped Feta
- 1/2 cup Parmesan
- Salt and pepper to taste
Instructions
- Add all the dressing ingredients into the food processor and blend
- Cook the pasta in boiling salted water and drain
- Add the cooled pasta in a bowl and add the dressing and mix well
- Add the sun-dried tomatoes, olives, cherry tomatoes, parsley, feta, parmesan, salt & pepper to taste and serve cold
