

Inspired by a great blackcurrant syrup I made together with Mint, I’m going to be treating my friends to this great Blackcurrant Mojito!

Cheers to a great summer – well a strange summer. With COVID-19 all around, we are gathering in small groups. But life is always a reason to celebrate and I love to use the harvest from my backyard whenever I can.


Every year, I make a Blackcurrant jam, but with the cold spring this year, the crop wasn’t as large as in previous years and I decided to try something different – a sweet and intense Blackcurrant syrup! This great syrup led to many other recipes, including this delicious Blackcurrant Mojitos. A backyard BBQ was made that much more special with these delicious drinks!




Blackcurrant Mojito
Ingredients
Per glass
- 2 – 3 quarters Lime
- 6 – 8 Mint leaves
- 1 tsp Sugar
- 1 tbsp Blackcurrant syrup see recipe below
- Ice
- 1.5 fl oz or 45 ml Bacardi or white Rum
- 200 ml Club Soda
Instructions
- Add the lime, mint leaves and sugar as crush together using a mojito muddler
- Add the syrup, add ice and rum and top with soda
- Stir and drink – cheers
