Often served as an appetizer, Dragon Chicken is made from Chicken strips that are battered and fried and tossed in a sweet & spicy gravy to coat.
It’s a super easy recipe to put together even if you want to throw it together for a mid week snack. Even though it’s typically ordered as a snack or appetizer, it can also be served as a dry side or main. If you want more gravy to this recipe. Just double or triple the sauce ingredients.
Dragon Chicken
Ingredients
- 1 lb boneless Chicken
- Salt and Pepper to taste
- Batter
- 6 tbsps all purpose Flour
- 4 tbsps Corn starch
- 1/2 tsp Baking powder
- Salt & Pepper to taste
- Water as needed
- 2 Eggs
- 1/4 cup raw Cashews
- 1/2 cup sliced Onion
- 1/4 cup sliced Spring Onion
- 1/4 cup finely minced Garlic
- 1/4 cup Sambar Oelek or Chilli paste
- 1/4 cup Ketchup
- 2 tbsps dark Soya sauce
- 1/4 cup of Water
- 1 cup green Pepper julienne strips
- Sprinkle of Sesame seeds
Instructions
- Add salt & pepper to the chicken strips and leave aside
- Prepare the batter by adding the flour, corn starch and baking powder together
- Add water a little at a time till there are no lumps
- Add the eggs mixing well to make a smooth batter
- Pour the batter over the chicken and mix well to coat
- Fry the chicken strips till golden brown and drain on some kitchen towel
- Heat some oil and saute the cashews and keep aside
- Heat some oil and saute the onions & garlic
- Add the chilli paste, ketchup & soya sauce
- Add a bit of water and mix in
- Add the green peppers
- Add the chicken and toss to coat
- Add the cashews and sprinkle with sesame seeds
