Often served as an appetizer, Dragon Chicken is made from Chicken strips that are battered and fried and tossed in a sweet & spicy gravy to coat.

It’s a super easy recipe to put together even if you want to throw it together for a mid week snack. Even though it’s typically ordered as a snack or appetizer, it can also be served as a dry side or main. If you want more gravy to this recipe. Just double or triple the sauce ingredients.

Ingredients
  

  • 1 lb boneless Chicken
  • Salt and Pepper to taste
  • Batter
  • 6 tbsps all purpose Flour
  • 4 tbsps Corn starch
  • 1/2 tsp Baking powder
  • Salt & Pepper to taste
  • Water as needed
  • 2 Eggs
  • 1/4 cup raw Cashews
  • 1/2 cup sliced Onion
  • 1/4 cup sliced Spring Onion
  • 1/4 cup finely minced Garlic
  • 1/4 cup Sambar Oelek or Chilli paste
  • 1/4 cup Ketchup
  • 2 tbsps dark Soya sauce
  • 1/4 cup of Water
  • 1 cup green Pepper julienne strips
  • Sprinkle of Sesame seeds

Instructions
 

  • Add salt & pepper to the chicken strips and leave aside
  • Prepare the batter by adding the flour, corn starch and baking powder together
  • Add water a little at a time till there are no lumps
  • Add the eggs mixing well to make a smooth batter
  • Pour the batter over the chicken and mix well to coat
  • Fry the chicken strips till golden brown and drain on some kitchen towel
  • Heat some oil and saute the cashews and keep aside
  • Heat some oil and saute the onions & garlic
  • Add the chilli paste, ketchup & soya sauce
  • Add a bit of water and mix in
  • Add the green peppers
  • Add the chicken and toss to coat
  • Add the cashews and sprinkle with sesame seeds
