Pickle or Achar as it’s called in Hindi is different from how we think about pickles in North America. And like many recipes there are literally a hundred different ways to make them. There are so many vegetables that get pickled but the most common are Carrot, Eggplant, Gherkins, Mango and of course Limes & Lemons. There are also non vegetarian Fish and Shrimp pickles. In Goa from my Dad’s side of the family Shrimp pickles and Balchaos are famous whereas from my Mom’s side, they are famous for their East Indian Wedding pickles.

Lemon Pickle

Ingredients
  

  • 6 Lemons
  • 2 tsps Fenugreek seeds
  • 1 tsp Cumin seeds
  • 1 tsp Coriander seeds
  • 1 tsp Mustard seeds
  • 10 Kashmiri Chillies
  • 15 regular Chillies
  • 1/4 cup each Ginger & Garlic
  • 3/4 cup Vinegar
  • 1/4 cup Oil
  • 1 green Chilli
  • Add all the ground paste and cook this for a few minutes
  • 1/4 cup Water

Instructions
 

  • Boil the Lemons for 20 mins and then allow to cool
  • Roast all the seeds and then add the chillies
  • Grind to a powder
  • Add the ginger and garlic and then the vinegar and grind to a paste
  • Heat the oil, add the chilli and then the ground paste and fry
  • Add the water
  • Quarter the lemons and add to the pot and cook for a minute
  • Bottle and store for 1 – 2 months till it matures
