Peanuts are the star in this chutney together with lentils, spices, sesame seeds onions & Curry leaves. Peanut chutney is a delicious and protein-rich South Indian condiment that pairs well with idli, dosa, vada, or even rice. I even like to smear it on a roti or puri like Peanut Butter 🙂

Peanut chutney stays fresh for about 2-3 days in the refrigerator when stored in an airtight container.

Tips for Longer Shelf Life:

Use boiled water: If adding water while grinding, use boiled and cooled water to prevent spoilage.
Avoid raw onions: Onion-based chutneys spoil faster.
Use more tamarind or lemon juice: The acidity helps preserve it longer.
Store in a glass container: Helps prevent contamination and keeps it fresh.
No tempering in advance: Add tempering just before serving if storing for later.

For longer storage (1-2 weeks), you can make a dry peanut chutney powder (roasted peanuts + spices) and mix with water only when needed.

Peanut chutney

Ingredients
  

  • 2 tsps Chana Dhal
  • 2 tsps Urad dhal
  • 1 cup Peanuts
  • 4 cloves Garlic
  • 2 green Chillies
  • 2 tbsps Sesame seeds
  • 1/4 cup Curry leaves
  • 1 cup sliced Onion
  • Pinch Hing / Asafoetida
  • Salt
  • Pinch Jaggery
  • 2 inch piece Tamarind in 1/2 cup hot Water
Tadka
  • 1 tsp Chana dal
  • 1 tsp Urad dal
  • Allow this to cook for a while in the hot oil so the Chana dal is roasted
  • 2 Red Chillies
  • 1/4 cup Curry leaves
  • 1 green Chilli sliced

Method
 

  1. Roast Chana & Urad Dhal till they turn color and is cooked, remove and keep aside
  2. Add the raw Peanuts and roast them, then add in the Garlic, green Chillies, Sesame seeds, Curry leaves and sliced Onions.
  3. Cook the Onion till it gets translucent
  4. Add Salt to taste and a pinch Jaggery
  5. Transfer this to a food processor and allow to cool
  6. Add a pinch of Hing – this has numerous health benefits
  7. Add the soaked Tamarind and the water and process
  8. Prepare the tadka by sautéing all the tadka together and pour over the Peanut Chutney
