This simple Noodle salad is made with Bean Noodles and is dressed with a wonderful sweet, sour & salty dressing and topped with Shrimp, Veggies, & Herbs. I love using bean noodles, this is typically made from mung bean and is similar to rice noodles but has a transparent texture when cooked and is hence also called glass noodles. You can eat it hot or cold and it’s very versatile.

Shrimp Glass Noodle Salad

Ingredients
  

  • I have 300 gms 10.5 oz Bean Noodles
  • 2 tbsps Palm Sugar
  • ½ cup hot water
  • Juice of 2 Limes
  • 3 tbsps Fish sauce
  • 1 tbsp Red Curry paste
  • 1 tbsp of Cilantro stems
  • 2 tbsps dried Shrimp – soak in hot water
  • 1/2 cup Spring Onion bulbs and the leaves
  • 1/2 cup Carrots
  • 1/4 cup sliced Spring Onion bulbs
  • 1 tbsp sliced finger red Chillies
  • 1/2 cup sticks of Cucumber
  • 300 gms cooked Shrimp
  • 1/2 cup mixed herbs Coriander Mint & Thai Basil

Method
 

  1. Soak the bean noodles in hot water for 10 mins and drain
  2. Snip the noodles with a scissor
  3. Soak the palm sugar in hot water and allow to cool
  4. Prepare the dressing by adding the lime juice, cooled sugar water, fish sauce, curry paste, cilantro stems and rehydrated shrimp
  5. Add some of the dressing over the noodles, followed by the spring onion, carrot, spring onion bulbs, sliced chilli, cucumber, cooked shrimp & mixed herbs and toss
  6. Add more dressing to taste
