I was inspired to make my grandmother’s ‘cutlice’. She was an uneducated woman that had to work hard to provide for her kids. Her English was not good and we teased her when she used to say ‘cutlice’ instead of ‘cutlets’!
One time in school, someone who knew of my family and their past said to me ‘did you know your grandma used to clean houses?’ She expected me to die of embarrassment, instead I felt pride & I held her in the highest regard for doing whatever it took to put my Mom & my aunt through school and college. She was a drama queen for sure, a Scorpio just like me, but she always put us first and she was an amazing cook and we never went hungry! Her cutlice will break the internet one day! Rest in peace Mama!
Please note that I don’t have her written recipe, instead I just tried to replicate it on my own. These cutlets are made with raw meat, flavoured with a spice paste, egg, coriander, soaked bread & fresh breadcrumbs. These are formed into patties, dipped into breadcrumbs and shallow fried.
Beef Cutlets
Ingredients
Bread
- 2 slices soaked and squeezed dry
- 1 slice fresh Breadcrumbs
Spice Paste
- 8 cloves
- 2 tsps black pepper
- 6 1/2 inch cinnamon
- 6 cardamoms
- Garlic – 10 gms
- Ginger – 10 gms
- Chillies – 5 gms
- Onion – 45 gms
- Juice of 1/2 a Lime
Meat
- 500 gms of medium ground Beef
- Salt to taste
- Spice paste
- 1 Egg
- 1/4 cup chopped Coriander
- Soaked bread
- Fresh Breadcrumbs as needed
- Dried Breadcrumbs
Instructions
- Soak the bread slices and squeeze them dry and keep aside
- Add one slice of bread and make fresh breadcrumbs
- To make the spice paste add all the whole spices and grind
- Add the Garlic, Ginger, Chillies & Onion together with the juice of a lime and grind
- If there are still pieces of the ginger & garlic that aren’t fully pureed yet, add a little of the soaked bread and grind
- Add this spice paste to the meat after you add salt to taste
- Follow with the egg, coriander and all the soaked bread
- Add as much of the fresh breadcrumbs as needed and mix everything in
- Form these into patties, dip into dry breadcrumbs and shallow fry on both sides till the patties are fully cooked
