Boti Kebab is a grilled boneless kebab typically made with meat – Beef, Lamb or Mutton and it can also be made with Chicken. The meat is marinated twice and the marinade includes a tenderizer that gives the meat it’s soft texture.

We commonly think of Boti as a piece or a small chunk but the word is derived from a special traditional knife that was used to cut the meat. Cutting the meat into small chunks and marinating it with spices and a tenderizer, ensures that the meat is not tough to bite into.

Ingredients
  

  • 2 lbs boneless Beef/Lamb/Mutton Sirloin cubes

1st marinade

  • 1 tsp Salt
  • 1 tsp fresh cracked Black Pepper
  • Juice of 1/2 Lemon
  • 2 tbsps Ginger & Garlic paste
  • 1 tbsp Papaya paste
  • 1 cup fried Onions

2nd marinade

  • 1/2 cup hung Yogurt
  • 2 tbsps Mustard Oil
  • 2 tbsps green Chilli paste
  • 1 tsp Garam Masala
  • 1/2 tsp Turmeric
  • 1 tsp red Chilli powder
  • 1 tsp Cumin powder
  • Optional to grill and garnish
  • Onions
  • Green Chillies
  • Lemon halves
  • Fresh Coriander

Instructions
 

  • Marinate the meat cubes with the first marinade and leave for 30 mins
  • Marinate the meat with the second marinade and leave for 1 – 2 hrs to overnight
  • Grill the meat till cooked on all sides together with the onions, chillies and lemon halves
  • Serve with some chopped coriander
