Kale Meal Prep

Ingredients
  

Kale & Barley Stir Fry
  • 1/2 cup sliced Onions
  • 100 gms Sausage
  • 1 cup Barley presoaked cooked & drained
  • 1 tbsp dark soya sauce
  • 1 tbsp Chilli Garlic sauce
  • 4 cups of the super Kale mix
  • 1 cup chopped boiled egg
Kale & Kidney Bean soup
  • 4 cups of Water
  • 1 Boullion cube 10.5 gms
  • 1 Bay leaf
  • 2 tbsps julienne of Ginger
  • Salt & Pepper to taste
  • 1 can Kidney beans 540 ml 19 fl oz drained and rinsed
  • 2 cups super Kale mix
Kale Hash Browns
  • 4 cups grated Potatoes
  • 1 cup Super Kale Mix
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • Salt & Pepper to taste
  • 2 tbsps Flour
  • 1 Egg
Kale fried rice
  • 1/2 cup Onion
  • 4 cups cooked Jasmine
  • 2 tbsps light soya sauce
  • 1 Egg
  • 2 tbsps Sriracha sauce
  • 2 cups super Kale Mix
Chicken in Black Bean sauce with Kale
  • 1/2 cup sliced Onions
  • 1 lb Chicken cut into small cubes.
  • 2 tbsps Black Bean paste and some of the oil
  • Salt to taste
  • 1 tbsp of Kecap Manis
  • 1 cup of stock
  • 2 cups of the super kale mix
  • 2 tsps Cornstarch slurry

Method
 

Kale & Barley Stir Fry
  1. Saute the onions and add the sausage and cook it
  2. Add the barley and spread it out
  3. Add the dark soya and chilli sauce and mix well and allow the barley to caramelize just a little
  4. Add in the super kale mix and the boiled egg
Kale & Kidney Bean soup
  1. Heat the water and add the bullion cube
  2. Add the bay leaf and ginger and bring to the boil
  3. Add salt and pepper to taste and add the kidney beans
  4. Add the super kale mix and cook only for a minute
Kale Hash Browns
  1. Squeeze all the liquid out of the potatoes by squeezing through a cheesecloth
  2. All all the other ingredients, mix well and divide
  3. Heat some oil in a pan, flatten each portion using oiled hands and fry on both sides till cooked
Kale fried rice
  1. In a wok, saute the onions
  2. Add the rice and spread out
  3. Add the soya and crack in the egg on one side and scramble to cook
  4. Add the Sriracha sauce and super kale mix and mix well
Chicken in Black Bean sauce with Kale
  1. Saute the onions and add the chicken
  2. Add the bean paste and some of the oil
  3. Add salt and cook the chicken for a few minutes
  4. Add the kecap manis and the stock and allow to boil for a few minutes
  5. Add the super kale mix and a few tsps of the slurry to thicken the gravy
