

Now that I got your attention, I do hope you will try this incredible recipe. This recipe was created quite by accident, I was recipe testing my Falafel recipe for the blog and channel and I had a little left over that was not quite enough to form a whole Falafel. I didn’t want to waste it so I just sauteed with Olive oil. It was so delicious, that I had this idea of adding more Herbs, Tomatoes, pickled Turnips, Olives and Feta to it to make this incredible salad.


To make this, I wouldn’t process the chickpeas as much as I would if I were to make Falafel. The texture looks like couscous or broken wheat (Burgul) and nobody will believe that these are Chickpeas. This makes a great side but is also a fabulous vegetarian meal. And, this recipe is also vegan and gluten free. How amazing is this?





Falafel Salad
Ingredients
Falafel Mix
- 250 gms dry Chickpeas
- 1 cup Onion
- 4 cloves Garlic
- 1 tbsp green Chilli
- 1 cup Parsley
- 1 cup Coriander
- 1/2 cup Dill
- 1/2 cup Mint
- 1/2 tsp Cinnamon powder
- 1/4 tsp Clove powder
- 1 tsp Aleppo Pepper or Chilli powder
- 1 tsp Cumin powder
- 1 tbsp each Salt & Pepper
Salad
- Olive Oil as required
- 1 cup halved Cherry Tomatoes
- 1/2 cup pickled Turnips
- 1 cup crumbled Feta
- 1/2 cup Kalamata Olives
- 2 cups herbs Parsley, Coriander, Mint & Dill
- 1 tbsp white Sesame seeds
- 1/4 cup Pinenuts
Dressing
- 50 ml Lemon juice
- 50 ml Olive Oil
- 1 tsp Garlic paste
- Salt & Pepper
Instructions
- Soak the chickpeas overnight in water and drain
- Add to a food processor with the onion, garlic, green chilli, half the herbs and the spices, salt, pepper and process
- Add the other half and continue to process depending on the size of your food processor
- The mixture should be gritty and not smooth
- Heat some olive oil and saute the mixture, let it sit for a minute so you get some browning at the bottom and then saute again till the chickpea is cooked
- Cool completely
- Add the rest of the ingredients cherry tomatoes, pickled turnips, feta, olives, extra herbs, sesame seeds & Pinenuts and toss to coat
- Prepare the dressing by shaking all the dressing ingredients together and add as much as you need
