Pav Bhaji Masala


  • 12 Red Chillies
  • 8 Kashmiri Dry Red Chillies
  • 3 tbsps Coriander Seeds
  • 5 Cloves
  • 1/2 tsp Pepper
  • 2 tbsp Cumin Seeds
  • 2 tbsp Fennel Seeds
  • 1 inch stick Cinnamon
  • 3 Black Cardamom seeds
  • 1 tsp Turmeric
  • 1 tbsp Dry Mango or Amchur Powder


  1. Roast everything except the Turmeric and Amchur Powder
  2. When cool add the Turmeric and Amchur powder and grind to a fine powder
  3. Store in a dry airtight container
