Cutlet Pao is famous in Goa where you can find this on street stalls and beach shacks. The concept is simple – thinly sliced Beef is marinated in a green chutney, then dredged in egg and breadcrumbs and shallow fried. It’s served on crispy bread with butter or Mayonnaise, some green Chutney, Tomato, a special simple Cabbage slaw and Ketchup. Of course every vendor has their own version of this recipe, and while Beef is the original protein, Chicken is also served as many don’t eat Beef in India.

This makes a great snack, but it’s also perfect as a light lunch or dinner.

Ingredients
  

Chutney/Marinade

  • 2 cups Coriander
  • 2 green Chillies
  • 1 tsp Cumin seeds
  • 1 tsp Cumin
  • Peppercorns
  • 1 tsp Salt
  • 1/4 cup Vinegar
  • 1/4 cup Water

Cabbage salad or slaw

  • 1/2 cup sliced Cabbage
  • 1/4 cup julienne of Carrots
  • 1/4 cup sliced Onion
  • 1/4 cup each red and green Peppers and 2 tbsps Coriander
  • Salt & Pepper to taste
  • 1 tbsp Vinegar

Beef Cutlets

  • 2 lb chunk of boneless Beef
  • 1.5 Eggs
  • 1/2 – 1 cup Breadcrumbs

Instructions
 

  • Prepare the chutney/marinade by processing all the ingredients together
  • Slice the beef thinly and pound using a mallet
  • Marinate the meat in 3/4 of the prepared green marinade and keep aside for 30 mins
  • Prepare the cabbage salad or slaw by mixing all the ingredients together
  • Dip the beef slices in egg and then breadcrumbs and then shallow fry
  • To assemble the sandwich – add some mayonnaise, some chutney, a slice of tomato, the cutlet, the slaw and top with some ketchup
